Roy's Teriyaki Chicken

Serves  4

  • 1 cup Soy Sauce

  • 1 tbsp. Chopped Garlic

  • 1 tbsp. Minced Fresh Ginger

  • 1 or 2 Chopped Scallions

  • 1 cup Sugar

  • 4 Boneless Chicken Breasts, with skin

  • 3 cups Short or Medium Grain Cooked Rice

  1. In a medium bowl, combine the soy sauce, garlic, ginger, scallions, and sugar.

  2. Pour the marinade into a shallow dish large enough to hold the chicken breasts in a single layer and add the chicken.

  3. Set aside in the refrigerator to marinate for about 1 hour, turning the chicken halfway through the marinating time.

  4. Light the grill or preheat the broiler.  Cook the chicken over medium-high heat if grilling, or under the broiler, for 3 to 4 minutes on each side, until it is opaque throughout.

Note: Try salmon or steak in place of the chicken.  Prepare in the same way and cook until the desired doneness is reached.
