Roy's Teriyaki Chicken
1 cup Soy Sauce
1 tbsp. Chopped Garlic
1 tbsp. Minced Fresh Ginger
1 or 2 Chopped Scallions
1 cup Sugar
4 Boneless Chicken Breasts, with skin
3 cups Short or Medium Grain Cooked Rice
In a medium bowl, combine the soy sauce, garlic, ginger, scallions, and sugar.
Pour the marinade into a shallow dish large enough to hold the chicken breasts in a single layer and add the chicken.
Set aside in the refrigerator to marinate for about 1 hour, turning the chicken halfway through the marinating time.
Light the grill or preheat the broiler. Cook the chicken over medium-high heat if grilling, or under the broiler, for 3 to 4 minutes on each side, until it is opaque throughout.
Note: Try salmon or steak in place of the chicken. Prepare in the same way and cook until the desired doneness is reached.
